Pearson’s Catering recently catered a function for our friend George Spencer’s birthday. What did we make to celebrate? (pictures below!)

Some new sandwich items:

  • Grilled sandwich layered with pear compote, roasted pear, gorgonzola, fontina, and monterey jack cheeses
  • Smoked brisket layered with pepper gouda, monterey jack, roasted red peppers, and caramelized onions
  • Smoked pulled pork with our own bbq sauce on hawiian rolls

We added grilled corn dip with blue corn chips and thai chicken skewers marinated in lemon grass and coconut milk, then grilled and served with a peanut sauce.

We also did a baked brie with a homemade caramel sauce and ginger snaps.

We finished the menu with some awesome new desserts:

  • white cupcakes filled with strawberry jelly and topped with a peanut buttercream and a strawberry buttercream
  • devils food chocolate mini cupcakes filled with mint buttercream with peppermint bark folded in topped with milk chocolate buttercream
  • almond cupcakes filled with apricot curd and topped with an almond buttercream
  • mini parfaits with hazelnut cake layered hazelnut mousse and topped with whipped cream
  • mini parfaits with ginger marscarpone mousse layered with mangoes and whipped cream topped with a pineapple syrup
  • mini parfaits with Dan’s chocolate cake, oreo cookie crumbs, marshmallow buttercream and topped with whipped cream

Doesn’t THAT sound delicious?!

Recent Breakfast & Lunch Event – Menu

Pearson’s Catering recently catered an event at the Larson Allen Accounting firm.   We prepared both breakfast and lunch.  For breakfast, we added some new pastries to our repertoire, take a look at these:

  • From scratch cinnamon rolls with raisins and lots of cinnamon topped with a cream cheese frosting
  • Orange marmalade and cream cheese danish pastries
  • Apple turnovers
  • Homemade almond filled bear claws
  • Aunt Margie’s banana bread
  • Blueberry streusel yogurt muffins
  • Pumpkin raisin muffins

Our lunch menu included:

  • Greek grilled chicken with a kalamata, tomato, caper, butter sauce and lemon-scented rice
  • Blackened chicken with a tropical fruit salsa over yellow rice
  • Chicken Marsala with basil pesto tossed pasta
  • Cashew turtle brownies and Oreo brownies
  • Citrus sugar cookies
  • Blueberries and cream cookies
  • Raspberry white chocolate decadence cookies
  • Heath bar cookies
  • Milk and dark chocolate chip cookies

Recently Pearson’s Catering was privileged to put together a menu for an event with the Resource Consulting Group.  The africa-themed event included: smoked pulled pork with homemade BBQ sauce; grilled corn dip with tomatoes, peppers, garlic, jack and pepper jack cheese; shrimp salad; apple chicken sausage; puff pastry with white cheddar & granny smith apples; mushroom asiago quiche bites; mini cupcakes filled with meyer lemon curd, almond cupcakes with apricot almond buttercream, and animal sugar cookies!

“The Women of Wellesley”, an organization that puts together social functions for the Wellesley Condominiums in College Park, FL has used Pearson’s Catering & Gifts for our last 5 parties and have had excellent service at each and every one. In an effort to keep our costs in line, whenever we have to choose a caterer we try to get different bids from various catering services that our members have heard good things about. Bottom line is, we always come back to Kim Pearson. The food is consistently delicious, the selections are diverse, and her prices are the best.
